Cereal killer
I got this muffin recipe off the side of a cereal box. Seriously. A box of Publix brand bran flakes which, yes, are as unspecial as they sound. I had used them for another recipe and they were sitting on a pantry shelf when I saw the recipe for "Berry Special Muffins" on the side. Despite the berry lame title, I do love muffins. And turning bran flakes into muffins is pretty much like water into wine so I'm game. I veganized this recipe. My profound reason for doing this was "why not?"
I was happy with the results. They turned out well but not mind-blowing. Small-ish, they didn't fluff up all that much. Good for portion control if you're into that sort of thing. Not sure if an extra sprinkling of baking powder or baking soda would have given them a little more lift?
Cereal Box Muffins
Ingreeds:
Topping
-3/4 cup bran flakes (I added some walnuts too)
-bag, ziploc (something to smash the flakes in, slap chop if ya got it)
-1 tablespoon Earth Balance
-couple drops of vanilla or almond extract
Muffins
-cooking spray
-1/2 banana
-1 3/4 bran flakes
-1 cup unflavored non-dairy milk + 1 tablespoon lemon juice (add the milk to the lemon juice and let sit for a few minutes. acts as buttermilk)
-3 tablespoon vegetable oil
-1 cup all purpose flour
-1/3 cup splenda
-1 tablespoon baking powder
-1 teaspoon ground cinnamon
-1 cup blueberries, frozen or fresh (drained if fresh)
Construction:
Preheat oven to 400degrees. Farenheit! Spray or line those muffin cups.
Toppin: Smash up cereal/nuts. Microwave Earth Balance til melty (20secs). Stir in cereal and extract of choice and mix well. Set aside.
Muffin time: Mash up banana in medium bowl. Stir in cereal, milk, oil. Let stand 5 minutes. Stir cereal to break it up a bit.
In a larger bowl, combine flour, sugar/splenda, baking powder and cinnamon. Add cereal mixture and stir just until combined. Batter will be thick. Fold blueberries gently into mixture.
Portion out into muffin cups.
Bake 20-25 minutes. I'd suggest adding topping about 10 minutes into baking. Enjoy!
