Veginspiration

Like most vegos, I can trace my initial reason for going vegetarian to a pretty specific moment/event. Mine was a class called Environmental Justice that I took in my last semester of college. I had had many stints as a vegetarian throughout my teenage years.  I would give up meat for a few months...except for bacon...which my dad loves to tease me about to this day.  So although it was on the back burner of the brain stove for a long time, this class opened my eyes and changed my life.   I had a classmate who was super-passionate about veganism and social justice and the food industry and I can't deny how infectious it was.  I called him my veggie inspiration to my friends all semester.  His final project was this 'zine which I came across just this morning.
If the revolution is to begin, it has to begin with food...it has to begin
with land, animals, farmers, nature...it has to begin with
what's in my body and what's in my head.

40(ish) pages of info on eating for peace, genetically modified foods, food costs and the social and environmental implications of the meat and dairy industry.  Plus he includes a few vegan recipes at the end.  Awesome!  I never got the chance to thank him so I'll do that now.  This is dedicated to you, Kevin, my veggie inspiration!  

Whatever your personal food choices are I think there's one thing we can agree on - hummus!  (haha ok probs not but I was looking for a good transition so sue me)  I love hummus.  And homemade hummus is the way to go, lemme tell ya.  I followed the recipe from Appetite for Reducion, the latest from Isa Chandra Moskowitz.  She gives a standard hummus recipe (only 2 WW+ points per 1/4 cup) and then gives suggestions for add-ins.  I whizzed up the horseradish-dill variety and it's a delight.  Plus it gave me the opportunity to used some of that dill from the farmer's market.  

I've used this in sammies, wraps, scooped out of the tupperware on my finger...
This spread was a post-July 4th weekend lunch cause I was in the mood for something healthy and kinda light.  Leftover meatless loaf and veggies and hummus.
