make ya feel good

Yesterday I made the Everyday Chickpea and Quinoa Salad from Appetite for Reduction.  My apologies to anyone in the Spartanburg County Library System hoping to get their hands on this book as I've really been working the 'renews' on this one.  Anyway, I vouch that this salad is truly what it claims to be - filling, delicious, nutritious and totally customizable.  I was excited to make the dressing which uses soaked cashews and water in place of oil as well as a few other tricks and treats to take it up a notch.  My standard vinaigrette is oil, vinegar (I like it vinegar-y), garlic, dijon mustard, salt and pepper.  Shaken up in a jar.  This one gets blended in a food processor and it's really great.

I felt really good after eating this.  Perfect for these hot, humid days when you want something filling but not heavy.
