Stranger things have happened....Or have they?
Each day, a few times per day for us lucky ones, we make food choices and decide what to eat. It depends upon many things, our mood, our schedule, even the weather. There are those people who can eat the same thing for weeks on end and others who don't even like leftovers. People with texture issues, problems with food touching on the plate or even color preferences. I think it's all very interesting, our relationship with food. Even being a vegetarian with vegan-tendencies :) I don't consider myself a picky eater though I'm sure some don't see it that way. But I, like the rest of us, do have my food quirks and for a long time one of them was strictly no fruit in my food. No pears on salad, no pineapple on pizza, no cranberries in stuffing. I have a friend who loved to order a pear salad at a particular restaurant and eat it deliberately in front of me while I grimaced. My brother would repeatedly question me "but have you tried it?!??", unable to understand how I didn't enjoy one of his favorite food combinations.
Well, things have changed. Out of nowhere! I saw the recipe for Pineapple Rice in Appetite for Reduction and it appealed to me. And I made it and ate it and loved it! ....are you scraping brain bits off the wall behind you because I blew your mind??? Probably. And since then I've ordered and eaten and loved an asian pear salad with pecans and other yummies. It was one of those salads that looks HUGE when it arrives and next thing you know you're spearing the last forkful.
The Pineapple Rice was flavored with red curry and cilantro and red onion and the cooked pineapple became a bit sweet, a bit tart. Definitely making this one again!

Lettuce (I like arugula but whatever boats your float)
Pineapple, cut into inch-thick rings & grilled
Red Onion, cut into 1/2 inch-thick rings & grilled
Chopped Mint
Dressing (out of a bottle is the lazy...I mean quick & easy way to do it, but A-Z's dressipe from 'Make Ya Feel Good' works great. I tend to vary mine depending on the ingredients I have in stock - love to use a lil marmalade, honey, oj, wine for sweetness or to cut the oil...the dijon mustard, in my opinion, is a MUST, pun intended)
For the veggies but not the veegues, a little fresh mozz or goat cheese is D to the lish on this bad boy. Oh and also, the best way to do salads in my opinion is to toss the greens with the dressing, then top with the goodies for optimal dressing dispursage/avoiding dressing overusage.
So lay down those greens, pile on your fixin's, and top with the fresh mint. Don't be afraid to go overboard on this lil herb, it's MINT.
