Twin Oaks tofu

I picked up a couple kinds of Twin Oaks tofu at Asheville's VegFest this past Sunday.  Twin Oaks is a cooperative community in Luisa, VA.  They have a great website and make some yummy tofu.

As you can see there is an 'Italian Herb tofu' and a 'Garlic and Shiitake more-than-tofu'.  The more-than-tofu is enhanced with quinoa and amaranth, another nutritious grain.  These aren't packed in water so no need to press.  They're firm and easy to cook up.  First, I topped a quinoa-chickpea salad with some 'more-than-tofu', raw.  And it was great.*  The second time I just put the pieces in a pan with some cooking spray and they browned a bit and were even better.

*OmniDad tried a bite of the more-than-tofu, straight from my plate.  He said it "tastes earthy". 

A really great product!  I'm thinking maybe a quiche with the other package.... or a scramble... or tofu balls on pasta... or a sammie...
