VeganWatch! Day 8
End of day 8 here at Amy's vegan HQ. All's groovy except for one unfortunate incident involving pesky fish oil in an unsuspecting tub of SmartBalance margarine that I used for an apple crumble topping. Read those labels people! Or don't, but be warned. Animal products sneak their way into illogical places. Insidious ingredients aside, I've been keepin the animal cruelty to a minimum and the awesomeness to a maximum.
In my (very) short time as a practicing vegan it hasn't been the elimination of dairy or eggs from my diet that has been challenging. The tricky bit is the self-examination and deciding how important this is. Hearing myself say “I wonder if this is vegan” and feeling a bit odd about it. But I have a supportive fam who's willing to roll with it and most importantly, try the food! Here's a meal from a few days ago and it was a hit.

If, like me, you don't have one of those tools that can shred up a zucchini into proper pasta-like strands, just use a potato peeler. Don't have one of those? Use a knife or somethin, I dunno, jeez! If the zoods are a bit chunkier, you may want to boil them for a minute but mine were so thinly shredded that I just sauteed them for a few and they were the dankness.
