vegetarian sloppy joes eh

Canada is the #1 producer of lentils, who knew? A delightful export from our neighbors to the north. And like (most) Canadians, lentils are not to be feared!  Embrace them and love them. This little legume is perfecto in this easy and tasty dish.

Recipe is from the PPK.  Snobby Joes I used brown lentils and soaked them overnight but that was more of a planning snafu than an intentional move. It did mean the lentils needed very little actual cooking time but other than that I followed this recipe exactly.
