whatever floats your zucchini boat

stuffed zucchini.  or zucchini boats, if you will.
and i will.  and did.
The stuffed zucchini in the spotlight today is a fitting first post for 3 reasons.
1) the obvious connection to this blog's name
2) it's closely based off of a recipe I found online.  I've gotten heaps of inspiration for cooking on vego/vegan blogs and am so grateful for that.  (thanks for sharing!)
3)  it's delicious
This recipe seems to be an adaptation of an adaption of an adaption.  Like in the movie Multiplicity but instead of Doug depreciating in awesomeness and becoming a misogynistic slob, he morphs into a superfit, triathlon-competitor.  My iteration of this recipe is like that.  I followed the adapted recipe below, used one massive zucchini and added 1 cup of Boca crumbles.  And a bit of extra sauce.  In the photo the closer zuke is topped with nutritional yeast and the other with parmesan.  http://www.megabeth.net/?p=302
I thought it turned out super well!  Mamabear, Papabear, Brobear all enjoyed it too.  They're not vegetarians but they're also not picky eaters so I'm not sure what their vouching will mean to you.  How about I say that 4 out of 4 eaters were happy.  100% satisfaction, people!
