Somethin Pumpkin #2
Today I was inspired by this recipe for Pumpkin Penne with Crispy Sage and Toasted Pecans. I decided that this week's something pumpkin would be my own creamy pumpkin penne. I had some leftover veggie soup so I used 1/3 cup of that, 1/3 cup of pureed pumpkin and 1/3 cup of soymilk. I tossed it all in the blender with some minced garlic, a few shakes of nutmeg and s&p. I smothered whole wheat penne with the sauce and added a few drops of Frank's Red Hot.
I also made a massaged kale salad. I had read about this on various blogs and wondered, 'um so do you really massage it?' I got the answer from A, B, C, Vegan and it's yes. It's fun getting hands-on with your food! You sprinkle the kale with lemon juice, olive oil and sea salt and literally massage it for some minutes. The lemon juice breaks down the kale, softens it up. It even shrinks in size a little bit and turns a more vibrant green.
Captain Obvious says: don't attempt this with any cuts on your fingers.
