Somethin Pumpkin

Like many of my fellow mofo-ers, I am in the pumpkin groove.  (How are the southern hemisphere bloggers feeling about the pumpkin onslaught?)  I wanted to get my pump on and went with The Best Pumpkin Muffins from the PPK.  They came out great even though I only had enough batter for 11 muffins.  The "not crazy about pumpkin" member of my family has already eaten a couple.  I had one with some of yesterday's leftover chili and it rounded out the meal, giving it that autumnal edge.  I actually think I like it better than the cornbread as side to the chili.

I absolutely love those muffins. I make them as often as possible. I like to sub maple syrup for the molasses and I put chocolate chips in them (so I usually reduce the sugar to compensate). SO good!

I'm said family member. What I said was, "This is the best Pumpkin Muffin I've ever eaten. However, if I never had another pumpkin muffin in my life, I wouldn't miss it." The next day I had one with cream Cheese. Not bad. Not bad at all.
Yum, I love those muffins. A friend made them for me with chic chips once & they were awesome!

i've got to try those pumpkin muffins, and muffins are usually pretty darn easy to de-glutenize. yours look awesome and i would have never thought to enjoy one as a side to chili. brilliant & tasty!
