the day after

This post is a little overdue but I wanted to write about the day after my all- veggies-and-fruits smoothies day.  That day I had a smoothie for breakfast because I was hungry but wasn't feeling super receptive to food.  I made it with banana, peach, fresh figs off the tree in the backyard, unsweetened almond milk and about a tbsp of flax seed meal.





















When eating the figs raw I typically eat the whole thing but for the smoothie I scooped out the fleshy bits.













For lunch, I made a salad to eat in lettuce wraps cause I was still feeling something light.  I (very) loosely based the recipe off this at Happy Herbivore. 


I used these large butter beans because I had them and I thought they'd be ok for the base of the salad.  However, they were too soft.  BUT the taste was incredible.  I loved it.  You should definitely use tofu or a firmer bean like chickpeas but the flavors really hit the spot.  Happy Herbivore has lots of beautiful recipes I'm looking forward to trying.

Very good idea for fresh figs. It's hard to find good uses for them.
