Peachy pancakes

This past week I had one of my oldest, dearest, bestest friends at my house for 5 days.  It was great fun with lots of lake time and chill time.  We didn't do all that much cooking but I did make pancakes the morning she left.  We were waking up early (read: 9:30) for a little lakeside dock time and I wanted a kinda special but kinda quick breakfast.  I'll admit I was totally going to just grab the Bisquick box but in my groggy morning haze I missed it.  (Spoiler alert: it's kept in the fridge.)  Anyway, all was for the best cause I got the chance to try my hand at some made-from-scratch pancakes.  And why not make them vegan?  I don't have an answer for that - I did make them vegan!
I used this recipe http://vegetarian.about.com/od/breakfastrecipe1/r/veganpancakes.htm.  Just 6 ingredients, flour, sugar (I used splenda) baking powder, salt, soy milk (I used unsweetened almond milk) and veg oil.  I also added a few shakes of cinnamon.

I also made a peachy sauce.  side note: SC peaches rule!  May through September we get delicious delightful peach fruit.  Anyway to get some peach goodness into my friend before her departure to the North, I made this sauce.  http://allrecipes.com/Recipe/fresh-peach-sauce/detail.aspx
Quick and easy.  Great side, I should have made 3 times as much!

I am an obnoxious peach snob since I grew up with an overly abundant peach tree in the backyard. Now our poor tree doesn't make any more fruit, but oh how I wish it did so I could make this sauce! Store-bought peaches just don't cut it for me.
