Eat Dessert First

Last month, some family friends came to visit from New York.  The youngest daughter specially baked vegan whoopie pies and brought them along.  They were amazing!!  What? You don't have friends come to visit bringing hugs and delicious treats and leaving in their wake warm memories and leftover tubs of frosting?  Well, sucks to be you!
Emma, my lil vegan baker-in-training, used the recipe below for the chocolate whoopie pies and created her own perfect frosting recipe using the tried and true technique of trial-and-error.  When she told me about the pies, I was touched she made something special with me in mind.  After a bite I was impressed and after finishing the first pie I knew I had found a new favorite.  For the record, I'm not even a huge dessert person.  I certainly enjoy it but I'll take a second helping of mac and cheese over that brownie.  And I may go for cake or ice cream now and again but if it's not great, I can leave it on the plate.  But these?  These babies will have you slapping your grandma for the last one.

FOR THE FROSTING:
1 stick unsalted margarine
4 1/2 cups confectioners sugar
8oz Tofutti Better than Cream Cheese
2 Tbsp vanilla soy yogurt

-cream margarine and sugar with hand mixer for 3-4 minutes
-add cream cheese, mix for 1 minute, add yogurt, mix for one minute more
-put mixture in a bag, cut off a corner and squeeze onto pies
