homemakin: veggie broth
A good mofo theme for me would have been 'firsts'. It's my first mofo, for starters, and it would have been easy to think up 30 (errr, 20) recipes, techniques, etc that would have been firsts for me. In fact, one came up just today. I made my first batch of veggie stock. It feels really good to make stuff. I used stubby old veggie bits and the scraps from a couple rounds of juicing. I froze 2 bagsful of the stuff.

I put 1 onion in with it, covered with water and brought to a boil. Then just sim simmer for awhile.

After taking it off the heat, I waited for it to cool. Then I strained with cheesecloth.
So how does it taste? Needs Salt!! Despite the conspicuous lack of saltiness, there are so many flavors in this broth.
Better put it to use. I had loads of mixed dark leafies and made beans and greens, it's pretty much my grandma's beans and escarole.
Get some onions going in olive oil. Add garlic. Then add broth and greens and some salt. Wilt them down and then add 2 cans small white beans. I like to used dried beans when I can but I like canned ones in this meal. Cook for awhile and savor the impressively simple and delicious combo.
**Mofo is only a few days in and already I can see amassing a hearty stack of recipes-to-make that will last all the year through. Amazing!
