Juicy Tuesday

As the post title suggests it's a liquid day for me today which has so far meant a rumbly tummy, unappetizing green juice photo attempts and general feeling of....blah.  I have had other more successful juicing days so I'm not totally blaming that.  (I know that there are other factors affecting my sense of malaise but the hunger isn't helping.)  Let's take a journey back to happier times!  20 long hours ago when I was gearing up to chow down on this luscious black bean and sweet potato chili (topped with Galaxy Veggie Shreds).


I based this off this recipe from vegweb.com.  I really liked the use of cumin along with cinnamon and cocoa.  They added richness without being overpowering.  And the veggie shreds melted nicely achieving that thin stretch from bowl to mouth.


I have a bunch of this gooey goodness leftover.  I plan to mow it straight from the fridge eat it plain, or on a veggie dog.  IDEA ATTACK!!  I just had the notion to revamp this into a burger. What do you think?  Add some dry ingredients like breadcrumbs or grains?  And mash it all up into a veggie burger-type chili patty?  Time to forage the interwebs for inspiration/tips.

This chilli looks great so I have no doubt that it would be awesome made into a burger as well!

This is as good a chilli as I've ever eaten. The sweet potato is a really nice touch. And yes, I agree, it is a veggie burger in disguise.
