Pizza for One

Making food for others is enjoyable and motivating.  But sometimes we find ourselves alone, lazy and contemplating the fastest way to food.  I was in that situation yesterday, uninspired to cook anything and then I realized, I'm not alone.  I have my blog!  And all you mofo'ers and readers.  Time to get inspired because blogging means writing, writing about cooking.  So that's how this girl found herself elbows deep in pizza dough on a Sunday afternoon.
I followed this recipe for Perfect Vegan Pizza Crust.

It's a fantastic recipe that requires time and presence but not a whole lot of work.  (I divided it up and froze a bunch.)  The dough was wonderfully malleable and with a modicum of practice you'll be tossin dough like a pro!  I dusted it with cornmeal and topped it with exactly what I wanted (pizza for 1 bonus!)  I made some tomato sauce with a bit of pumpkin puree for sweetness.  I then added caramelized onions, mushrooms, spinach and Galaxy veggie shreds.


I know that a pizza stone is the way to go but I don't have one and even on foil it was awesome!  YUM.

Your pizza does look amazing! That dough is one of the best I've seen recently! Just a heads up, Galaxy Veggie Shreds aren't vegan, they contain milk. The package is so misleading, if I hadn't read the ingredients I would have assumed they were vegan. :( Your pizza has inspired me to make one myself!
