Blue Sky Cafe, Fletcher, NC
Yesterday my dad and I took a lunchtime motorcycle ride up to Fletcher, NC. I was on my brother's Suzuki DR 650 as he's out of town and I've been making sure it doesn't get rusty ;) Fletcher is a small town we chose as a destination because of it's ideal distance from home, 50 miles of twisty roads up into the mountains of western NC. It was a beautiful day for a ride (for most things, really) and we found a cool little place called Blue Sky Cafe for lunch. They have a huge menu. Huge I say! Starters, salads, wraps, platters plus burgers and sides. Their vegetarian options are clearly marked, you can sub tofu on any of their 20+ wraps and all can be made vegan. On their website there is a dedicated 'Vegetarian and Vegan' section that outlines how to order to ensure your meal is vegan. It has a comfortable, friendly feel and it's order-at-the-counter style. Props to Blue Sky for making eating veg delicious and easy.
I got the chipotle wrap with black beans, chunks of tofu, onions, green peppers, chips and salsa. Yum!
